OK - time to give up on encryption.....

After a little bit of research on the encryption side of life, I've
decided that LUKS/dm-crypt is probably a better option than most others,
as it offers the possibility of multiple pass phrases. I have just been
trying out LUKS encryptd file structures on Windows thanks to this (On
the fly encryption):
