For a "dedicated server" you could try a NAS box such as the Netgear
ReadyNAS items.  These are set up to do NFS out of the box, and 
also mirroring Raid if you slap another disk in.

They run Linux so it's familir territory, but are already set up 
with what you need and have a point-and-drool web interface for 
configuration.
