many linuxes allow you to create an encrypted file system during install
phase (might be hidden in advanced disk options).
suse's had it since, er 10.0, and I think umbongo^Wubuntu has had it for
a while.

one thing to bear in mind if DIY, to make sure if you enter the wrong
passphrase/key that you don't blindly force mount + fsck - good idea to
store a secure hash of the passphrase/key so you know if it's been
entered wrongly!
