From what I remember from last year the OpenCD cds went down
particularly well and are a really good way of breaking people into
free software without having to completely change OS. OpenCD seems
to have died and been replaced by OpenDisc (www.theopendisc.com). I
downloaded the ISO for this yesterday and it seems pretty slick.
They also have a nice printable origami cover which you can make for
it which would make it more attractive. I reckon burning a stack of
these to give away would be a good thing.
Also balloons (preferably helium), and batches of OpenCola :-)

I think the market stall was an ideal way to promote the event and
I'd be happy to help out again. I think an installfest would be a
good thing too, but you'd be targeting different crowds so the two
things would complement each other. If we're able to do both it
might be an idea to do the installfest a week later so you could tell
people at the market that if they were worried about installing linux
for themselves they could bring their machine along the next week and
have it done for them.
